In France, everywhere where cognac is produced, the
evaporation of the eau de vie stored in the casks is called "the angels'
share".
The evaporation of the maturing cognac in the casks mixing with the air
in the storehouse results in a mushroom (the Torula Compniacensis) that
stains the white walls of the storehouses and the buildings and roofs
in the vicinity.
So what could be more natural than an angel (played by the dancer Patrick
Dupond), less etheral than some and intrigued by the savoury smell, who
decides to go down and look for himself. He floats over the region observing
how the soil, the climate and the seasons influence the growth of the
vines. Hovering in the shadowy storehouse, he breathes in the aroma and
tastes the cognac. Regaled by such delights, his only desire is to lengthen
his stay amongst humans.
